GET SOME PEP IN YOUR STEP

Stuffed peppers was one of my favorite dishes that my Mom made growing up, so needless to say I was super excited to get to recreate a lower carb version of this recipe from my childhood. My mom would stuff her peppers with rice, so instead I’m trading in the carbs & substituting with some cauliflower rice for this modern remake.

The ingredients for this recipe are super affordable, scrumptious & savory. Not to mention, the endless health benefits that red peppers bring to the table! They are packed with vitamin C, folate, vitamin B6, lycopene & vitamin A.

When it comes to choosing peppers I always reach for red bc they come packed with the most nutrients. They stay on the vine longer which allows them to ripen more than green, yellow or orange. Let’s dive into this easy & yummy recipe!

Ingredients:
·  3-4 red bell peppers
·  2 tsp extra virgin olive oil
·  1 lbs ground grass fed beef
·  1 tsp garlic powder
·  1/2 tsp kosher salt
·  1 12 ounce bag of cauliflower rice
·  1 large diced yellow onion
·  2 carrots (diced)
·  1 cup shredded Mozzarella
· 2 tbsp. sour cream
·  ¼ cup marinara sauce
·  4 tbsp. mozzarella cheese

Instructions:
1. Preheat your oven to 375* Slice the tops off of the bell peppers. Remove the seeds and arrange cut side up in a greased baking dish.

2. Heat the olive oil in a large, nonstick skillet over medium high heat. Add the onion, stirring frequently until semi-soft and fragrant, 2-3 minutes. Add the ground beef, diced carrots, garlic powder and salt. Using a spatula or wooden spoon begin to break the ground beef up into smaller pieces as it cooks. Try to keep the pieces around the same size so the beef will cook and brown evenly. Continue to cook for about 6 minutes, or until the beef is no longer pink.

3. Remove the pan from the heat. Stir in the cauliflower rice, 1 cup of mozzarella cheese & sour cream. Using a spoon begin filling the inside of the peppers with the mixture, then top with marinara sauce & the 4 tbsp. of mozzarella cheese.

4. Cover your baking dish with aluminum foil & place in oven for 10 mins. Remove from oven, remove foil & put back in oven for 15 mins.
