I thought that eating low carb & keto would be challenging when trying to get back to my Italian roots but I did some research, which led me to some healthier ingredient substitutions, which produced this delicious low-carb keto-ish dinner.

What substitutions did I use?
I made a classic chicken parmesan & used a keto friendly pasta sauce from @cucinaantica According to ketofoodist.com this is an approved keto friendly sauce! Although it’s keto, it does NOT lack in flavor! Their vodka sauce is now my new favorite go to 🍝

Calorie information:
📌 1 serving (1/2 cup) of la vodka sauce has 50 calories, 3 grams of fat, 5g carbs, 1g fiber, 2g of protein and 3g of sugar.

For the noodles I used a product called pasta zero by a company called @nasoya
📌One full package of noodles has 30 calories, 8g carbs, 6g of fiber and 1g of protein.

Some other delicious products I used to cook this meal up was @nelliesfreerange eggs for the baked avocados, for the pesto I didn’t want to spend a fortune on pine nuts so I substituted @mrpeanutofficial cashews instead and it tasted delicious!

All my research has told me that cashews are not an “approved” keto nut, hence the “Keto-ish” title. I hope these tips will help anyone craving some Italian style dishes!
